Thank you for your Food Protection Certificate Course yesterday at Costa's. Your presentation was terrific, as you addressed a very critical subject, yet made it most enjoable for all.
Do you give on-going individual courses at restaurants for employee education on Food Protection? If so, I would like to get some additional information from you regarding your course study, breakdown of subjects, and continuing education for employees in this area of considerable importance in operating a restaurant.

Hello,
I completed a course yesterday at the Marriott Residence Inn led by
Cindy and I wanted to take a moment of your time to say she did a
great job. I was very impressed by her knowledge of the material (no
notes) and her tireless efforts to bring energy and fun to what could
be a rather dull slog. I was also impressed by the way she worked
hard to engage her students with an entertaining (and disgusting!)
story about Thanksgiving dinner at her house, the little plastic
containers of mystery ingredients, the ultraviolet scanner for just
washed hands, etc. I was also very appreciative of good, important
information that she shared that seemed to go beyond the book. I am
thinking here in particular of her good advice regarding investigating
the delivery and return policies of providers as a key part of a cost
comparison between providers. Her control of the time and flow of the
class was excellent and she also did a great job of keeping us current
as to where we were in the day, for example, "Okay, just one more
topic and then we can have a little break." I thought she did a great
job of covering a lot of information in good time with excellent energy.
I could go on, but I think you get the idea. I have had the
opportunity to see a lot of teachers, trainers, group leaders in my
career and I want you to know that Cindy is a class act and an
excellent part of your company.

Responses to the open-ended questions about students' opinions of the course are as follows:
- The teacher kept her lecture lively, which kept the students awake and interested. She presented the information clearly, making it easy to remember.
- Positive: The amount of energy and knowledge Lisa had.
- Helpful info to know in this business.
- Lisa was a great instructor and made the class fun. I would like to have some more time in class to do the exercises (tests).
- Information was provided in a very clear and concise manner. Effective tools and examples were provided to make information easy to understand and apply.
- The instructor made this course.
- Lisa was able to take a horribly dry subject and not only make it palatable, but interesting. (Many people made this comment)
- She was fabulous and made leaming the sanitation material much much easier.
- Keep her teaching this seminar - truly a benefit to next semester's students.
- I would recommend this class, especially if Lisa is teaching. Who knew trichinosis could be fun!
Great teacher, extremely informative, truly learned a great deal.

- Lisa always gave excellent examples of real-life situations where problems arose.
- I thought Lisa did a wonderful job - it's not easy making sanitation interesting and she did.

I just wanted to say thanks for your leadership of the most recent sanitation class at the MRA building in December. Your class was *quite* informative, interesting, gross (but I mean that in a good, educational way, lol) and fun. I really responded to the way you taught your class and my test results showed it. Thanks so much for schlepping out to Milford and teaching such a small
class. I certainly enjoyed how dynamic you made it.
So I got the book last week and just saw that I passed the exam!
(You're probably notified also, but just in case you're not...) Oddly
enough, I was weakest in the "Temp. Measuring Devices" section. I
guess I'll read up on that chapter.
If you ever need any student testimonials, I'd be happy to provide
one, even though my name carries less than no weight in the industry.
(Yet. Give me a few years and we'll see what happens.) Also, I can
tell you what I recall from the exam if that helps, such as questions
about pathogens in general instead of specific bacteria.
